bbq chicken quinoa salad

i love using quinoa and have started substituting it for rice in lots of different dishes. today i’m reviewing this recipe by what’s gabby cooking.

this looks and tastes great! fair warning – my husbands comment was, this tastes healthy! he meant it in a good way but i think its descriptive.

i changed the recipe a little. she calls for white cheddar cheese, i didn’t have any so i used mozzarella. next time i would definitely go with a stronger cheese, like white cheddar, because it would add the flavor that mine was lacking. also, i couldn’t find a ripe avacado so i used edamame and it was a great add! i’d love to try this again!
