ironically cauliflower crust pizza is one of the first recipes i tried from pinterest, but it’s still one of my all time favorites. i can’t believe it has taken me this long to share.
in an effort to be more healthy we’ve tried to incorporate more veggies and less white flour into our diet (among other things). like the flourless strawberry muffins, i was excited to find a healthier and flourless alternative to pizza crust.
the recipe is super simple. my only adjustment was that i steamed the whole cauliflower over the stove instead of in the microwave and so i had to “rice” the cauliflower after i steamed it instead of before. i also double the recipe so it would be enough to fill the whole cookie sheet (my cookie sheets are small though).
one of the things i liked about this post is that it warned well in advance that the texture isn’t the same as normal pizza crust. even the pinner had noted this when pinning it. as eat.drink.smile notes- while it is possible to pick it up with your hands, it’s much easier to eat it with a fork.
surprisingly, it really doesn’t taste like cauliflower! this would’ve fooled me as a child (and i was pretty privy to when my mom was trying to sneak me vegetables). you wouldn’t know it was made with cauliflower.
the great thing is you can make it often and just change up the toppings. i’ve found it’s a great way to get rid of things that are about to go bad in my fridge.
