roasted artichoke

i’m kicking myself right now. i really want to review this artichoke recipe i used but i cannot find the blog it belongs to! please, if you know the origin of this recipe, please tell me and i’ll link to it!

look at this artichoke i made – yum!

i normally just cook the artichoke and dip it in butter but this preparation seems slightly healthier and a yummy alternative. here’s what you do:

cook the artichoke. i just cut the stem off, put it in a bowl of water, and microwave it for 5-10 minutes until the leaves come out easily. then cut, the artichoke in half, lengthwise. (many people cut off the tips of each leaf but i’m even too lazy to do that!).

in a pan, cook balsamic vinegar until boiling (just this based on the size of the pan and how much you want the flavor to soak up), add chopped garlic (2 cloves) and cook for a few minutes to bring out the flavor.

lay each half of the artichoke in the vinegar and cook for a few minutes.

put it on a plate and sprinkle parmesan cheese on top!

i really like this! it was super fast (if you cook the artichoke in the oven – it takes about an hour). its yummy and a great way to prepare an artichoke.
