pancake squares (plain and buttermilk)

i like pancakes but never get to eat them because my husband doesn’t like to eat breakfast food.  this is actually a really great thing for someone in my shoes or to serve a large group so you aren’t hanging out over the stove all morning.  one more idea: put a pancake square in your childs lunch box – what a treat!

basically, you bake your pancakes in a pan, cut it up into squares and you are able to easy save it for later!

robin sue has a recipe here for regular pancakes.  i made her recipe and thought it tasted great!  i added raspberries and bananas to part of the pancakes. i preferred the bars with the fruit.

tip: i didn’t have the right sized pan, so i used a pan just larger than the 8×8.  i added a little more of each ingredient (about 1/3 more) and kept an eye on it with a toothpick.  it took about 25 – 30 min in my oven but still worked great. keep an eye on it!

buttermilk pancakes

my family suggested that i try this with a buttermilk pancake recipe because most of my family likes them better.

here’s the recipe i used:

ingredients:

2 eggs                            2  1/2 cups buttermilk

2 c. flour                         1 Tbsp. baking powder

1 tsp. baking soda         1/2 tsp. salt

1/3 c. sugar                    1/3 c. butter

whip eggs until very fluffy. add sifted dry ingredients. slowly stir in melted butter.

i added this to my greased pan, added blueberries and bananas this time and baked it about 30 min.  this recipe made a thicker pan and the middle wasn’t completely done.  again, keep an eye on it!
